R Baker Co., Ltd. will offer two limited-time croissants at its 45 locations nationwide, including its bakery cafe chain “R Baker,” starting Friday, August 8, 2025. These include the ‘Nobikuro’ croissant, generously featuring matcha from Kyoto Uji’s long-established “Hotta Katsutaro Shoten,” and the “Kome Kuro” rice flour croissant.

R Baker bakes bread with a focus on “delicious bread for the mind and body,” using carefully selected domestic rice flour as the main ingredient to create bread characterized by a chewy, moist texture. Their signature product, the “Stretchable Croissant,” is especially popular. It boasts a crispy croissant exterior and a new texture inside that stretches like mochi. It has garnered over 5 million views on social media and sells out 5,000 pieces daily. This spring, the ‘Stretchable Croissant’ was upgraded to the ‘Even More Stretchable Croissant’ with a revised recipe for enhanced flavor and stretchiness. Now, a new limited-time flavor, the ‘Matcha Stretchable Croissant’, made with generous amounts of matcha from the long-established Kyoto Uji shop “Hotta Katsutaro Shoten”, is available. Additionally, the popular crispy rice flour croissant ‘Kome Cro’ now comes in a matcha flavor. One characteristic of ‘Hotta Katsutaro Shoten’ matcha is its double-roasting process. When kneaded into the dough and baked, it creates a vibrant green cross-section and enhances the flavor. Enjoy the rich taste of matcha in this bread.
